Ingredients (Serves 2)
Seafood & Protein:
1/2 lb medium shrimp, peeled and deveined
1/2 lb squid, skin removed and cut into bite-sized pieces
1/2 lb thinly sliced pork (optional)
Vegetables:
1/3 lb napa cabbage, cut into bite-sized pieces
1-inch carrot, thinly sliced
20 snow peas, ends removed
1/4 onion, thinly sliced
4 dry shiitake mushrooms, hydrated and cut into quarters
1/2-inch piece ginger, julienned
Marinade for Seafood:
1/2 tbsp Hakouya salt koji
1/2 tbsp Japanese sake
Sauce:
1–1.5 tbsp salt koji
1/2 tbsp Japanese sake
3 fl oz chicken stock
1 tbsp potato starch or cornstarch, diluted in 2 tbsp shiitake soaking water
1/2 tsp sesame oil
Cooking Oil:
2 tbsp oil (divided)
Instructions
Marinate the Seafood:Combine shrimp and squid with the salt koji and sake marinade. Let sit for 20 minutes.
Cook Pork (if using):Heat 1/2 tbsp oil in a large frying pan. Add pork and cook 1–2 minutes until just browned. Remove and set aside.
Cook Seafood:Add another 1/2 tbsp oil to the pan. Stir-fry shrimp and squid for 10 minutes. Save any juice released during cooking for the sauce. Remove seafood and set aside.
Stir-Fry Vegetables:Add 1 tbsp oil to the pan. Sauté ginger and onion for 30 seconds. Add carrot and the white stem portion of napa cabbage; stir for 1 minute. Then add the remaining vegetables and stir-fry for another minute.
Make the Sauce:Pour in sake, the saved seafood marinade juice, and chicken stock. Bring to a boil. Slowly mix in the potato starch or cornstarch diluted in shiitake water. Stir quickly until the sauce thickens.
Finish the Dish:Add sesame oil, then turn off the heat. Finally, stir in the remaining salt koji to enhance flavor.
Serve:Enjoy your seafood stir fry as is, or serve over steamed rice for a hearty meal.
