About Us
Hakouya is a small-batch fermentation kitchen with two guiding missions:
A return to tradition
We practice the Japanese cooking methods passed down through generations: slow fermentation, natural ingredients, and letting time and microbes do their work.

A space of nourishment and education
We share not only miso, amazake, and fermented products, but also the knowledge, care, and cultural heritage behind them, so more people can reconnect to food that truly sustains them.

Our miso and amazake are handcrafted in small batches, using whole ingredients and traditional techniques. They are the result of a patient, living process that carries stories along with nourishment


Our Beginning ​​

Masumi Diaz grew up in the Japanese countryside near Mount Fuji on a diet of probiotic food made from scratch, "farm to table" style. Throughout her childhood, she enjoyed watching both of her grandmothers prepare the delicious meals.

After she moved to the U.S., Masumi found herself missing that feeling of home. The food around her was different, and her body started to feel out of balance.
"I missed the flavors, the nourishment. I was feeling sick all of the time with stomach aches after eating!" says Masumi.​

One day, Masumi decided to start making miso the traditional way her family taught her: by hand, in small batches, letting time and nature do the work.​ After experiencing the benefits herself, she founded Hakouya to share foods that nourish both body and heart.
Today, with over 20 years of experience, she continues the legacy with her family. She is passionate about making fermented foods a staple in every home and helping families bring them to their own kitchens.​​


Our Process
Each batch is made by hand and aged for up to 18 months, allowing the flavors to deepen naturally while keeping the probiotics alive. The result is miso that’s rich in umami, full of beneficial enzymes, and deeply nourishing.
Most miso products sold in stores have added alcohol, which kills beneficial enzymes. At Hakouya, we don't stop the fermentation process when packaging our products, so you will get the precious health benefits!. ​
